Smoked Venison

Ingredients: 2lbs Venison/Elk
                  1cup FRESH onion, chopped fine
                  1/4 tlbs FRESH garlic
                  4 cups soy sauce
                  1 1/2 cups brown sugar
                  1/4 cup mustard
                  1cup molasses
                  3 tlbs pepper
                  3 tlbs REALLY HOT HOT SAUCE
                  1/2 cup veg oil

          Mix all the ingredients and let stand for 2 hours stirring occasionally. Then add venison/elk. Let marinate
for 2 to 3 days. Throw it in the smoker. (I use hickory chips) If you leave the meat in to long it will get hard.
